Ever looked at a pumpkin and just thought: No way could I be bothered to peel that? The best solution for that is to simply not peel it at all and cook it in its skin!
The easiest, and one of the tastiest ways to prepare pumpkin takes almost no preparation at all. Since our friends served a pumpkin up to us like this at one of their BBQs we almost always roast pumpkin this way now.
It couldn’t get any easier, simply cut your pumpkin (or squash) in half and remove the seeds.
Drizzle in olive oil and add seasoning to taste: Salt and Pepper is easy but for something next level mix it up with some herbs and/or nutmeg. Just about any combination will work; rosemary, thyme, mint – try what ever you think will taste good!
Roast in the oven or BBQ (on a roasting rack, not direct on the grill) at around 180°c until soft when a fork is inserted into the thickest section.
Serve with a large soup spoon and simply spoon out the sweet goodness. Great for using as a base for soup, mashed pumpkin, in pasta or just as a side with a Sunday Roast.
